My mom's hosting a Bunko party in a week or two. She's looking for a menu for 16 people that's fairly easy, doesn't involve opening cans of soup (which seems to be typical for this group) and is still a little bit different. She's decided to buy her main dish - some extra-spicy pit-roasted pig from a nearby bbq restaurant - but wants to make the side dishes herself. Here's what I'm recommending. I'll work on recipes this weekend, hoping to post for you Monday.
Salad of shredded romaine, sweet marinated red onions and black-eyed peas with yogurt-cumin dressing
Sauteed green beans and corn with chile-cilantro butter
Sweet potato cupcakes with orange-maple glaze
Dressing the salad is the only piece that can't be finished ahead of time and rewarmed. The sweet potato cupcakes are easier to understand if you imagine carrot or apple cake. Another bonus of this menu is that it provides excellent nutritional balance, if you go easy on the roasted pig. Greens and legumes are both included, and any vegetarian could do well with the sides alone. By glazing the cupcakes instead of icing them, you don't use as much fat and sugar.
